Muffins are a staple in our home. We have yet to meet a muffin we don’t love 🙂 I think what I love most about them is that it buys me 20 minutes of time while they bake to sit and drink my coffee. I mean… what else can I do?! 😉
This Pumpkin Muffin recipe is one of our favorites. It’s not too sweet and super moist. Sometimes I’ll add walnuts for a bit of crunch. And if I’m making them in the afternoons for snacks I’ll add chocolate chips for a treat. Hope you enjoy these as much as we do!
2 Cups flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. pumpkin pie spice
3/4 cup packed brown sugar
1/4 cup canola oil
2 large eggs
1 cup canned pumpkin
1 tsp vanilla extract
3/4 cup milk
Preheat oven to 350 degrees.
Mix together your dry ingredients.
Then incorporate your wet ingredients.
Pour your batter into your greased muffin tin.
Bake for 20 minutes or until done.
