It has brought me so much joy this past week receiving so many messages from you all! Recipes you’ve been loving, pictures of your kids helping in the kitchen and stories of how your families have been gathering more around the table. 1. Chicken Pot Pie (scroll down for the recipe below): this is such a comfort food! And this particular recipe is quick and easy to whip up. I love to serve it with a side salad and homemade ranch.
2. Frito Chili Pies: this recipe is SO delicious! It gives you a hearty chili that isn’t too “soupy”. We had this a few weeks ago on a cool fall day after a game of football in the yard. The kids loved having their dinner served out of a chip bag 🙂
4. Corndog Casserole: okay. Let’s talk this dish 😉 I will preface it by saying that Travis is NOT a fan of corndog casserole. But, my kids think it is the most delicious meal ever! So… this is one of those meals that our family has when Travis is working late OR we’ll have it for a hot lunch.

Chicken Pot Pie Recipe//
2 Pie Crusts
2 cans cream potato soup
2 cups cooked shredded chicken breast
1 can green beans, drained
1 can sliced carrots, drained
1 can corn, drained
1 can peas, drained
1/2 c. milk
1/2 t. dried thyme
Preheat oven to 350 degrees.
Combine soup, veggies, milk, thyme, salt and pepper in a large bowl.
Place 1 crust in the bottom of a pie plate and spoon soup mixture inside.
Cover with second crust and crimp the edges.
Cut slits in the crust to allow steam to escape.
Bake for 30-40 minutes or until your top crust appears done.
