Chew Chocolate Chip Oatmeal Bars

I am HUGE lover of Oatmeal Chocolate Chip Cookies (you can find my recipe here). But sometimes I want something a little easier that I can just throw in the oven once and be done. These Chewy Oatmeal Chocolate Chip Bars are a FAVORITE over here! They’re yummy right out of the oven hot, but I honestly prefer mine after it’s cooled down completely OR after it’s been in the fridge for a bit.  They have the perfect chewy texture and are pretty versatile.  You can add walnuts, add raisins, add peanut butter chips, add m+m’s… you get my drift 🙂  Hope you love them as much as we do!


2 Cups Flour
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Salt
2 Cups Old Fashioned Oats
1 1/2 Cups Brown Sugar
1 Cup Softened (or melted) butter
2 Eggs
1 Tablespoon Vanilla
1 1/2 Cups Chocolate Chips

Preheat your oven to 350 degrees.
Grease a 9×13 baking pan.
Mix together flour, baking soda, baking powder, salt, oats and brown sugar.
Once the dry ingredients are mixed together well, add in your butter, eggs and vanilla.
Mix until incorporated.
Then mix in your chocolate chips (or any other “extras” you are wanting).
Press the batter into the bottom of your 9×13.
Bake for 20-25 minutes or until completely done.

  1. Thanks for sharing. I’ve made this recipe 2x and it’s super forgiving. I’ve subbed banana for sugar (enter: breakfast bars!), added chocolate chunks, topped with peanut butter – just whatever I have on hand and strikes my fancy. I think the butter covers a multitude of sins. My kids think I’ve turned over a fun-mom leaf. SO much easier than cookies. They really are better the second day, too! Thanks again.
