These Mason Jar Cob Salads are the perfect on-the-go lunch or easy dinner for a quick and simple healthy side dish.

Ingredients:

Bacon

hard boiled egg

Diced Chicken

cherry tomatoes

shredded cheddar

lettuce

ranch dressing

They’re filled with fresh ingredients and proteins that will keep you fueled for a great day! They are easy to adapt and prep ahead making it easy to make healthy choices.

Prepare your hard boiled eggs and set aside to cool. Prepare your bacon however you prefer until it's nice and crispy. Set aside.  You can also substitute for your choice of protein.

Chop up your chicken and set aside. Shred your cheddar cheese and set aside. Chop up your cherry tomatoes and lettuce.

You're ready to assemble! In the bottom of a mason jar assemble using your bulkier ingredients first. The following order works well. Chopped chicken, bacon, hard boiled eggs, shredded cheese, cherry tomatoes and lettuce.

For the dressing, you can make your own and store in a separate mason jar.  You are ready to choose healthy!
