This Thick Beef Stew recipe is easy to make, filling, and super easy for a busy fall night!  Perfect for that first crisp cool evening!

Ingredients:

stew meat

avocado oil

red onion

It has tons of flavor and is one of those old-fashioned recipes that your entire family want you to make regularly!  Pair it with some biscuits and green beans and you're set!

The great thing about Beef Stew is that you can use an inexpensive cut of beef. The meat will get tender no matter what since it will be simmering in liquid as it cooks.  LOVE that I can do this!

If you’re not able to find pre-cut stew meat, you can cut a roast (look for a chuck roast or rump roast) into 1-inch, bite-sized cubes, super easy and sometimes more cost effective.

The cooking time will not vary a ton if you choose to use frozen vegetables or fresh vegetables. Just make sure to cook your beef stew on a slow simmer.
