I made the Skinny Taste’s Instant Pot Picadillo last night and it. was. so. delicious!!! You could easily make this in your crockpot as well if you don’t have an Instant Pot.

Press saute button, when hot brown meat on high heat in large sauté pan and season with salt and pepper. I love how this can be made all in one pot!
Use a wooden spoon to break the meat up into small pieces until no longer pink. This should not take too long!
Add onion, garlic, pepper, salt, tomato and cilantro and stir 1 minute, add alcaparrado or olives and about 2 tbsp of the brine, cumin, and bay leaf.
Add tomato sauce and 3 tablespoons of water and mix well. Cover and cook high pressure 15 minutes. Enjoy on those summer nights! You could also use lettuce as lettuce bowls!
