Instant Pot Picadillo: A recipe my WHOLE family will eat!

Instant Pot Picadillo

It is a RARE thing around here when all seven of us inhale the same dish and love it.  I made the Skinny Taste’s Instant Pot Picadillo last night and it. was. so. delicious!!!  You could easily make this in your crockpot as well if you don’t have an Instant Pot.

I made a few minor changes to the recipe which I am adding below.  It is so flavorful and hardy!  I served it over rice with avocado like she suggested.  But it would also be good in tortillas, with tortilla chips, wrapped in lettuce or just by itself.

INGREDIENTS:

1/2 large chopped onion
2 cloves garlic, minced
1 tomato, chopped
1 teaspoon kosher salt
1/2 red bell pepper, finely chopped (I used green pepper)
2 tbsp cilantro (I used about 4 tbsp.  of cilantro. We LOVE it over here!)
1-1/2 lb 93% lean ground beef (I used 1 1/2 lb of ground turkey)
4 oz (1/2 can) tomato sauce
1 tsp ground cumin
1-2 bay leaf
2 tbsp alcaparrado (I used 3 tbsp of capers)
DIRECTIONS:

Press saute button, when hot brown meat on high heat in large sauté pan and season with salt and pepper. Use a wooden spoon to break the meat up into small pieces until no longer pink.
Add onion, garlic, pepper, salt, tomato and cilantro and stir 1 minute, add alcaparrado or olives and about 2 tbsp of the brine (the juice from the olives, this adds great flavor) cumin, and bay leaf. Add tomato sauce and 3 tablespoons of water and mix well. Cover and cook high pressure 15 minutes. Natural or quick release and enjoy!
