Broccoli Cheddar Soup

A creamy and delicious Broccoli Cheddar Soup loaded with veggies and cheese.

  • ½ red onion
  • 2 large carrots, diced fine
  • 2 celery stalks, diced fine
  • 2 cloves garlic, diced finely
  • 4-5 cups broccoli florets
  • 2 tbsp salted butter
  • ¼ tsp salt
  • ¼ cup flour
  • 3 cups chicken broth
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese


  • Finely dice the onion, carrots, celery and garlic. Chop the broccoli into small florets as well. Set the broccoli to the side.
  • Melt the butter in a large pot over medium heat. Add in the onions, carrots, celery and garlic. Sprinkle with salt and saute until the vegetables are soft.
  • Sprinkle the flour over the vegetables and stir to evenly coat.
  • Pour the chicken broth and milk into the pot and stir well to dissolve the flour. Season the soup with salt and pepper to taste. Then add in the chopped broccoli.
  • Bring the soup to a low boil, then reduce to low. Cover and cook on low until the brocolli is tender (around 8-10 minutes).
  • Turn the heat off and stir in the shredded cheese. Stir until the cheese has melted completely. Serve and enjoy!
