Frozen Breakfast Burritos

If you are on the hunt for delicious and quick breakfast ideas for the upcoming school year, then look no further! These frozen breakfast burritos are a family favorite in our home! We eat them for breakfast, lunch, snacks and even sometimes dinner. They’re that good! They’re also a fabulous meal to bring to a new mom for a hearty snack or breakfast.

They take a little time to prepare since you’re making everything from scratch. You’ll brown the sausage, brown the hash browns, scramble the eggs, shred the cheese and then assemble them. I promise it’s worth taking the time to do! You’ll have a happy household!

To make everything stream lined, I have found it works well to place all of my finished ingredients on one large baking sheet. Brown the sausage, then place on the baking sheet. Brown the hash browns, then place on the baking sheet. Scramble the eggs, then place on the baking sheet.

When it comes time to assemble the breakfast burritos, get your kids to help you! We make an assembly line and it goes quickly with many hands helping. When assembling the breakfast burritos, I would suggest not overfilling them. A tablespoon of each ingredient is plenty for a taco sized tortilla.

Ingredients

  • ground breakfast sausage, browned
  • eggs, scrambled with salt and pepper
  • frozen hash browns: browned in butter with salt and pepper
  • shredded cheddar: freshly shredded cheddar cheese always tastes the best!
  • flour tortillas: the taco size tortillas works best

How to make Frozen Breakfast Burritos

  • Brown your ground sausage in a pan until it’s crumbly and brown. Place your browned sausage on a large baking sheet for later.
  • Place your frozen hash browns in a skillet with some butter, salt and pepper. Cook until brown. Place the hash browns on the baking sheet next to the ground sausage and set aside.
  • Scramble your eggs and cook on low with salt and pepper. Once they are scrambled, place on the baking sheet next to the sausage and hash browns.
  • Shred the cheddar cheese and set aside (you can also use pre-shredded).
  • Tear off 36 small rectangles of parchment paper and set aside.
  • Tear off 36 small rectangles of tin foil.
  • To assemble: place a tortilla on a piece of the parchment paper. Place sausage, hash browns, scrambled eggs and cheese inside the tortilla. Roll up the tortilla. Then fold the parchment paper around the tortilla. Finish by wrapping the parchment paper tortilla in tin foil. Wrap it tightly to prevent freezer burn.
  • Place in your freezer and enjoy on another day!
  • To reheat in the oven: just place frozen breakfast burritos on a tray. Heat for 20 minutes in a 350 degree oven.
  • To reheat in the microwave: take the tinfoil off of the burrito. Place the parchment paper wrapped burrito in the microwave for 50-70 seconds.

How to Reheat the Frozen Breakfast Burritos

  • To reheat in the oven: just place frozen breakfast burritos on a tray. Heat for 20 minutes in a 350 degree oven.
  • To reheat in the microwave: take the tinfoil off of the burrito. Place the parchment paper wrapped burrito in the microwave for 50-70 seconds.

  • Aluminum Foil

Ingredients
  

  • 1 lb ground sausage browned
  • 1 dozen eggs scrambled
  • 1 bag frozen hashbrowns browned
  • 1 bag shredded cheddar
  • 3 dozen flour tortillas taco size

Instructions
 

  • Brown your ground breakfast sausage and set aside.
  • Scramble your eggs (salt and pepper to taste) and set aside.
  • Brown your frozen hashbrowns and set aside.
  • Cut 36 squares of parchment paper and 36 squares of tin foil.
  • Place a tortilla on top of a piece of parchment paper. Place a spoonful of sausage, eggs, hashbrowns and cheese in the center. Roll up your tortilla and then fold the parchment paper around it.
  • Wrap your parchment paper burrito tightly with tin foil.
  • Pop them all into your freezer until you're ready for a warm meal! Heat them up in the oven or in your microwave.
