Laura Bush’s Cowboy Cookies
Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tbsp baking soda
- ½ tbsp cinnamon
- 1 tsp salt
- 1 ½ cups butter, room temp
- 1 ½ cups sugar
- 1 ½ cups brown sugar
- 3 large eggs
- 1 tbsp vanilla extract
- 1 bag chocolate chips
- 3 cups old-fashioned oats
- 2 cups sweetened flake coconut
- 2 cups chopped pecans
Instructions
- Heat oven to 350 degrees. Mix flour, baking powder, baking soda, cinnamon and salt in a bowl.
- In a large bowl, beat butter on medium speed until smooth and creamy. Gradually beat in the sugars to combine. Add eggs, one at a time, beating after each. Beat in vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.
- Using a cookie scoop, place 12 balls of dough onto a 9×13 baking tray. Bake in the 350 degree oven for 10-12 minutes or until the edges are golden brown. Take out and let them finish baking on the hot tray for a few extra minutes. Remove cookies and leave them on the rack to cool.
