I always try to plan my meals ahead, so we aren’t turning to the easy unhealthy alternative of going out to eat when we are in a pinch! If I plan my meals out with a mix of easy meals thrown in here and there, it makes my week go so much smoother!

My family loves Mexican food, so I am always trying to find easy ways to make these meals easy and quick. I found that using a crock pot or instant pot guarantees me easy dinner recipes! The few minutes of prep work in the mornings is worth it come dinner time!

Cooking beef in the crockpot makes the most delicious beef fajitas! Nothing beats slowly simmered beef put into warm tortillas and garnished with your favorite toppings! The meat is always so tender as it cooks slowly in all the juices at the bottom of the slow cooker!

How do I get my Fajita Meat Tender?

Here are a few tips to do before placing the meat in the crock pot if you want to have tender meat. Cut the beef against the grain. Slicing meat against the grain helps tenderize it. By looking closely at the steak, you’ll be able to see the direction the grain is running and cut accordingly.

You can also marinade with an acid such as citrus juice like lemon juice or vinegar. These liquids tenderize meat by breaking down its fibers.

While these steps aren’t necessary, they are a way to fancy up your fajita recipe if you want to give it a try!

What is the Most Tender Meat for Fajitas?

Round, skirt or flank steak are the best cuts for fajitas! We usually use round or skirt steak! It’s more tender and flavorful than flank and can be cooked well done (for those who prefer well) without getting tough and chewy.

How to Make Homemade Taco Seasoning for this recipe

I love to use homemade taco seasoning for this recipe because it is so simple! I usually have all these spices on hand, and it also cuts out any extra unnecessary ingredients they have in the prepackaged ones. If you are in a pinch or prefer the packaged taco mixes totally use it!

  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon ground paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon dried oregano

How to Assemble the Fajitas?

The assembly for these crockpot fajitas is so simple. I love and appreciate simple, don’t you?! You will take your cut of beef and slice it into thin slices, and then cut your veggies. You can use a green pepper, or red pepper, or a mixture of both!

Combine meat with the peppers, onions, salsa and your taco seasoning–we do a homemade taco seasoning because it’s so simple! Give a quick stir and place your fajita mixture at the bottom of slow cooker. You’ll cook on low heat for 6-8 hours or for less time you can cook on high heat for 3-4 hours.

Once your slow cooker beef fajitas are done cooking you can use slotted spoon to put the meat mixture into your desired warm tortillas! You can top with your favorite toppings! This recipes feeds my entire family!

We take any leftovers and store them in an airtight container in the fridge, but let’s be honest, there usually isn’t any leftovers!

  • 2 lbs Round steak or flank steak sliced in thin strips
  • 2 Bell Peppers sliced
  • 1 Red onions sliced
  • 3 tbsp Taco Seasoning
  • 1 ½ cups Salsa

  • Combine all of the ingredients into your crockpot.
  • Cook on low for 6-8 hours for cooking time or until the beef is tender. You can also cook it on high for 3-4 hours, but your beef might be a little tougher.
