Taco night at our house is a crowd favorite and my kids love it even more when I grill meat for our tacos. This Pollo Asado Taco Recipe has been voted by my kids as “the best chicken they have ever tasted.” It has amazing flavor and will make the best chicken tacos of your life!

This is a simple marinade recipe that makes incredibly delicious grilled chicken. You can use the Pollo Asado chicken in tacos or serve the chicken as your main meal with a side. If you are needing a new chicken recipe, this is one is a great addition to your meal plan.

Pollo Asado is a Mexican grilled chicken that has been marinated in delicious citrus juices and a blend of Mexican spices. Some Pollo Asado recipes call for achiote powder, but I have opted out of using it for my recipe.

You can easily cook the Pollo Asado chicken on your grill or in your oven. The instructions for both ways are in the recipe card below.

The grill will give your chicken a delicious flavor, but the oven works well in a pinch too.

Ingredient List

  • avocado oil: you could also use extra virgin olive oil or vegetable oil
  • fresh squeezed oranges: this recipe is best with fresh squeezed citrus juice. But you could also substitute and use already squeezed orange juice
  • fresh squeezed lemon: lemon juice from the store would work as well
  • fresh squeezed lime: lime juice from the store would work as well
  • garlic cloves, minced: Freshly minced garlic cloves will give you the best flavor for this marinade. But you can also use already minced garlic
  • smoked paprika: regular paprika would work as well. If you are out of paprika, you could also substitute for chili powder.
  • cumin: this is a must have spice for this recipe. It will give you that perfect Mexican flavor to the chicken
  • onion powder: you could also substitute this for garlic powder
  • chopped cilantro
  • salt
  • pepper
  • chicken breasts: you could also substitute and use another cut of chicken if you prefer. Boneless skinless chicken breasts or boneless skinless chicken thighs work best for pollo asado street tacos.

Pollo Asado Taco Ingredient Suggestions

  • Tortillas: warm corn tortillas or warm flour tortillas make this dish!
  • Shredded Cheese or Cotija Cheese: I prefer using Cotija cheese for Pollo Asado Tacos. But you could also use your favorite shredded mexican cheese
  • Pico de Gallo: homemade or store bought is delicious
  • Sour Cream
  • Fresh Cilantro
  • Sliced Avocado
  • Red Onion
  • Lime Wedges
  • Hot Sauce
  • Queso Fresco

How to make Pollo Asado Tacos

Make the marinade: Add all the marinade ingredients into a bowl and whisk together.

Marinate the chicken: Place chicken breasts and the marinade into a resealable plastic bag. Pop the ziplock bag into your refrigerator for 3-4 hours.

Grill: Preheat your grill to 350 degrees. Take your chicken breasts out of the marinade bag and place them on the grill. Grill each side for around 10 minutes each, depending on the thickness of your chicken breasts. The internal temperature of your chicken needs to be 165 degrees.

Stove Top: If you choose to cook your chicken in the oven, preheat to 450 degrees. Line a baking sheet with aluminum foil. Place your marinated chicken breasts on the baking sheet and put in the oven for 12 minutes. Flip the chicken breasts over and bake for another 5 to 10 minutes (depending on the thickness of your chicken breasts). The internal temperature of your chicken needs to be 165 degrees.

Serve: Once your chicken is cooked through, take it off the grill and let it rest for 5 minutes. Slice the chicken and serve on tortillas with all your favorite toppings.
